That just might be where I am in a year or two, getting a master's in public service. Sounds right up my alley, and the best part is that the AmeriCorps education award covers all the tuition.
But I refuse to live on ramen noodles and boxed mac and cheese when I'm a graduate student, so I've made it my mission in life (well, one of them, anyway) to collect as many recipes for rice and beans as I can. Preferably ones that don't require any meat to cook. And if anyone knows where the recipe for lime rice and peas that was in Vegetarian Times got to, you will be my new best friend. I love that stuff.
